Monthly vs Quarterly vs Semi-Annual — Which Are You?

NFPA 96 sorts every commercial kitchen into a cleaning tier by how hard it cooks. Figuring out which one you’re in takes about a minute — here’s the breakdown.

Monthly — high-volume and solid-fuel

You’re on a monthly schedule if your kitchen runs hot, heavy, or around the clock:

If you charbroil or run solid fuel, assume monthly until a technician tells you otherwise.

Quarterly — moderate volume (most restaurants)

The quarterly tier is where the majority of Houston sit-down restaurants land. If your line is busy but not extreme — a typical full-service restaurant, café, or diner cooking normal service hours — quarterly (every three months) is almost certainly your interval.

Semi-annual — low volume

Twice-a-year cleaning is for kitchens that cook lightly or seasonally:

Not sure? Err up

If your kitchen sits on the line between two tiers, choose the more frequent one. The cost difference between quarterly and monthly is small next to the cost of a failed inspection, a denied insurance claim, or a duct fire. A quick assessment of what and how much you cook will settle it — and once you know your tier, putting it on a recurring schedule means you never have to think about it again.

Quick answers

FAQ

Which tier are most restaurants in?

Quarterly. Most moderate-volume, full-service Houston restaurants fall into the every-three-months tier. Charbroil, wok, and 24-hour kitchens move up to monthly.

What puts me on a monthly schedule?

High-volume cooking — 24-hour operation, charbroiling, wok cooking, or solid-fuel ovens and grills, which also produce creosote.

Who’s on semi-annual?

Low-volume and seasonal kitchens — churches, day camps, and apartment/HOA amenity kitchens used only occasionally.

What if I’m between tiers?

Choose the more frequent one. The extra cost is small compared to a failed inspection or a grease fire, and a technician can confirm your correct tier.
